Sunday Meal Prep – Week 15

I’ve missed a few weeks of SMP, but I’m back and this is the 15th installment!

Here’s what I made this week:

Breakfast – Cinnamon Raisin Muffins, served with cashew butter and full-fat greek yogurt

Lunch – Mango Salmon with Roasted Broccoli/Cauliflower and a Blueberry/Feta Grain Salad

Dinner – Beef/Black Bean Tacos, served in corn tortillas with guac, salsa, spicy greek yogurt and hot sauce

And, of course, the snacks for the week are a combination of fruit (bananas, apples, grapes) and nuts (cashews, pecans, walnuts) and the dessert is dates with a bit of cashew butter!
