Sunday Meal Prep – Week 16

So, it’s actually Monday – but, the UK equivalent of Labor Day is today so I did my cooking today instead of on Sunday.

I’m super excited for the menu this week – so many healthy options!

Here’s what I made:

Breakfast – Blueberry Banana Oat Muffins for me (served with full-fat greek yogurt) and zucchini oats for my husband

Lunch – Mandarin Chicken Stir-fry  (onions, mushrooms, snap peas + mandarins with teryaki-marinated chicken) served with brown rice pilaf

Dinner – Turkey Meatloaf, a mixture of sauteed onions/bell peppers, panko, parmesan, egg, tomato paste, garlic + fresh parsley. I’ll eat these with a little avocado – yum!

Snacks are the usual nuts + fruit and I made my Chickpea Chocolate Chunk Blondies for my husband to bring into work for his birthday. People bring in treats for their birthday here!

Cheers for the week ahead and for 5 days until Michigan football begins!!
