OK, I’m not a big fan of these trendy food words either but you have to try these. If you can sneak veggies into breakfast, it’s a win in my book. These taste like the Quaker Oats packages you used to have as a kid (or still do, I don’t judge) but healthier. They also fill you up, even my husband enjoyed them and was full afterwards – if you know him, that says a lot.
Here’s what to do:
- Grate one zucchini (aka courgette, if you are a Londoner) in a bowl and set aside
- Put one cup oats, two cups almond milk (or cow’s, cashew, oat, rice – you decide), four tablespoons raisins, one teaspoon nutmeg, three teaspoons cinnamon and a dash of salt in a pot. Mix everything together and turn heat to high until it comes to a boil and then reduce heat to low and simmer for five minutes while stirring often
- Add in grated zucchini, two tablespoons chia seeds and two tablespoons maple syrup. Stir and continue to cook over low for an additional five minutes
- Take off heat, divide into two bowls and top with your choice of toppings – go wild
Ingredients (2 servings):
1 zucchini (courgette)
1 cup oats
2 cups milk of your choice
4 tbsp raisins
1 tsp nutmeg
3 tsp cinnamon
dash of salt
2 tbsp chia seeds
2 tbsp maple syrup
Optional Toppings:
chopped walnuts
greek yogurt
maple syrup
cashew butter
