Zucchini Oats – you know, ZOATS

FullSizeRender (2)

OK, I’m not a big fan of these trendy food words either but you have to try these. If you can sneak veggies into breakfast, it’s a win in my book. These taste like the Quaker Oats packages you used to have as a kid (or still do, I don’t judge) but healthier. They also fill you up, even my husband enjoyed them and was full afterwards – if you know him, that says a lot.

Here’s what to do:

  1. Grate one zucchini (aka courgette, if you are a Londoner) in a bowl and set aside
  2. Put one cup oats, two cups almond milk (or cow’s, cashew, oat, rice – you decide), four tablespoons raisins, one teaspoon nutmeg, three teaspoons cinnamon and a dash of salt in a pot. Mix everything together and turn heat to high until it comes to a boil and then reduce heat to low and simmer for five minutes while stirring often
  3. Add in grated zucchini, two tablespoons chia seeds and two tablespoons maple syrup. Stir and continue to cook over low for an additional five minutes
  4. Take off heat, divide into two bowls and top with your choice of toppings – go wild

Ingredients (2 servings):

1 zucchini (courgette)

1 cup oats

2 cups milk of your choice

4 tbsp raisins

1 tsp nutmeg

3 tsp cinnamon

dash of salt

2 tbsp chia seeds

2 tbsp maple syrup

Optional Toppings:

chopped walnuts

greek yogurt

maple syrup

cashew butter

And….ENJOY! I know you’ll love this as much as I do – delicious, healthy and filling. YUM
