Dates + Cashew Butter = Gold


I think dates have gotten a bad rap for too long – why don’t we change that! I always grouped them into the prune category and that’s not a category most things want to be grouped into. Ever since giving them a fair chance, I’m sold.

They are my absolute favorite after-dinner snack during the week – pop two of these babies and your sweet tooth will be fully satisfied. They are also great as a sweetener in smoothies when you want something more dessert-like, or in baked goods to give great texture as as an alternative to sugar.

Make sure to order the medjool variety – they are extra sweet and sticky. I get mine on Amazon but you can pick them up at most grocery stores these days or specialty stores.

First, pit the date and then put about half a teaspoon of cashew butter in the middle and eat like a little sandwich!

If you aren’t a fan of cashew butter, you could use any nut butter you like – peanut, almond, hazelnut, etc. However, if you haven’t given cashew butter a chance it’s my absolute favorite – so creamy and really brightens up not only this snack but baked goods, smoothies, salad dressings and pasta sauces.
