Blueberry Cucumber Breakfast Smoothie

I’ve always heard that cucumbers are good in smoothies, refreshing, etc. etc. etc. but never gave them a chance because I thought their taste would be weird with other fruit and especially bananas. I had no idea what I was missing! I made this beautiful creation this morning and it’ll definitely be in the smoothie rotation going forward – a perfect afternoon snack or light breakfast.

Here’s how you make it (2 servings):

  1. Put 1/2 a cucumber, 1 cup blueberries, 1 banana, 1 cup unsweetened milk of your choice and 1/2 cup greek yogurt into a blender
  2. Blend and serve immediately

I’m not sure a recipe could be simpler and I think you’ll love how the refreshing cucumber flavor comes through without any unpleasant veggie aftertaste, thanks to the banana.

You can definitely add additional smoothie add-ins – some good ones would be ground flaxseed, cinnamon, chia seeds or a squeeze of fresh lemon juice.

Ingredients:

1/2 cucumber, seeds included + skin on (about 6 inches)

1 cup frozen blueberries (fresh are fine, but make sure they are cold)

1 ripe banana

1 cup unsweetened almond  milk (or milk of your choice)

1/2 cup greek yogurt (I prefer 2% or full fat)
