Sunday Meal Prep – Week 2

Here’s hoping this post gives you some inspiration for things you could make today or sometime this week – all such great options!

Here’s what we have this week:

Breakfast: Oatmeal muffins – served with cashew butter and my raspberry chia jam

Lunch: Asian edamame avocado quinoa salad with sesame asian salmon. Served with the usual rosemary roasted sweet potato fries and sesame roasted brussel sprouts

Dinner: Taco Bar! This is my husband’s favorite – brown rice + taco meat (beef or ground turkey), served with a variety of toppings (black beans, avocado, greek yogurt and salsa)

Of course if you are a veggie, you can sub out a black bean burger or sauteed meat-free crumbles in place of the beef/turkey.

Kitchen Trick – when cooking the brown rice for the taco bar, throw in a packet of taco seasoning (store-bought or homemade) with the water. That way, the rice will soak up all the taco flavor while it cooks!

Enjoy your Sunday evening! If it’s anything like mine, it’ll involve Fuller House – I just need to distract my husband while I turn it on :)!
