Sunday Meal Prep – Week 12

I had brunch plans with an old co-worker at 11:30 this morning, I was able to get this all one before brunch! If you are short on time, go for fish/seafood – it takes only minutes to cook opposed to meat that takes much longer if cooking in the oven. Another huge time saver is planning in advance so you know not only everything you are making for the week ahead but you ensure you have the proper ingredients on hand when you start the meal prep!

I’m super excited for the menu this week – during summer I love to eat extra produce and lots of fish, I think most people have a craving for healthier things in the warmer months. Although, it feels like it could be fall here in London – definitely doesn’t feel like July!

Here’s what I made this week:

Breakfast: Oatmeal Plum Muffins – I’ll have these with a bit of cashew butter and greek yogurt, the plums were just perfectly ripe this week and will go so well with those toppings!

Lunch: Lemon Cranberry Salmon with Roasted Asparagus and Southwestern Corn Salad. I had cranberry sauce from ages ago (unexpired, don’t worry) that I was bound and determined to use – I mixed in fresh lemon juice, dried rosemary and a bit of Maldon salt to finish and it came out the perfect mix between sweet and savory. The corn salad was super easy too – I mixed together corn, black beans, bell peppers, red onion, jalapeno + feta in a lime juice/olive oil dressing and it’s SO refreshing!!

Dinner: Tuna Sweet Potato Casserole – if you are short on ingredients, this would be such a great option! I roasted up sweet potatoes as I normally do (~40 minutes on 200C/400F) and layered that in a casserole pan topped with bell peppers, red onions, black beans, tuna and fresh mozzarella. I think broiled it quickly to melt the cheese and will be serving it with extra hot sauce on the side!

If you use the same ingredients in multiple dishes, as I did this week (red onion, bell peppers, black beans) it will really help keep your grocery bill down without feeling repetitive.
