Greek/Mediterranean flavors are some of my absolute favorites – everything tastes so amazing and you don’t need a ton of time or ingredients to pull a meal together. This salad is one I just love and always satisfies my craving for “Greek” food!
The recipe for the salad isn’t an exact science, it’s more of a throw together whatever you have on hand, top with feta cheese and tahini dressing and it’s done. The one pictured above was spinach, quinoa, cucumbers, red onion, roasted red peppers, black beans, grilled chicken breast, feta cheese and the tahini dressing. It would be great with chickpeas, farro (instead of quinoa), olives, sundried tomatoes, zucchini – so many options that would all be amazing!
So, to make the tahini dressing here’s what you do:
- Whisk together 4 tbsp tahini, 4 tbsp water and the juice of one lemon
- Add salt/pepper to taste…DONE!
It doesn’t get much easier than that! If you aren’t familiar with tahini, it’s such a nice flavor – made from sesame seeds, it’ll remind you of a nut butter but more “earthy” and without the sweetness. You might recognize the flavor from hummus, but I think once you start using it you’ll find many fun ways to sneak it into your food.
Put this one on your list for those nights you don’t have anything prepared for dinner, want something healthy and need it ready in under 10 minutes!
