Lunch Box Series – Part 1


I started to bring my lunch to work back in 2010 – wow that feels like ages ago now – and haven’t looked back since! I was a few years out of college, about to enter grad school and buy our first condo, and needed to start saving money wherever I could. This seemed like the easiest place to start.

The first few months were SO boring, it was always a combination of grilled chicken, brown rice and veggies. I’ve upped my lunchbox game and now thoroughly look forward to eating them!

I realized that while I post my lunchboxes on Instagram, I never put them on the blog! I think they are a great source of inspiration if you are new to bringing your lunch, or want to switch up what you bring.

Here are some of my favorites over the past few months:


Balsamic Yogurt Chicken, Caprese-Stuffed Portabella Mushrooms, Roasted Broccoli and Roasted Sweet Potatoes


Sesame Asian Salmon, Asian Edamame Avocado Salad, Roasted Brussel Sprouts and Roasted Sweet Potatoes
