It is finally warming up here in London, such a nice treat! I’m slowly learning that we won’t have what I consider a ‘traditional’ summer – i.e. hot and humid, but since we don’t have air conditioning that’s probably for the best!
This week’s menu looks great, I tried out a few new things that I’m really excited about and hope it gives you some ideas for the week ahead.
Here’s what I made:
Breakfast – Banana Pecan Muffins
- I’ll have these with a little greek yogurt and coffee
Lunch – Orange/Lemon Chicken with Pesto Portabellas, Roasted Broccoli and Pesto Smashed Potatoes
- I made homemade pesto (basil, pine nuts, garlic, olive oil + salt) – it’s super simple to do and quite cost-effective as well!
- The orange/lemon chicken recipe is super simple and delicious – the recipe is on the blog
Dinner – Chipotle Salmon with Chipotle Smashed Potatoes
- Chipotle sauce is my new favorite thing to put on everything! I mixed up 5 tbsp adodo/chipotle with 1 cup greek yogurt and a bit of salt – it works great on potatoes or salmon, but would be great with chicken as well!
I’m looking to find white peaches to mix with the heirloom tomatoes for a super simple summer salad my college roommate told me about – I’ll post a pic once I make it!
