Mediterranean Grain Salad

This is such an easy side dish to throw together and has great flavor! It’s wonderful with salmon or my lemon/orange chicken. I made it with pearl barley but it could easily be switched up and made with wheat berries or farro (i prefer it with a hearty grain unlike a quinoa). You could also switch up the mix-ins, sun-dried tomatoes would be great or olives if you like them (I do NOT).

Here’s how you make it (10 large side servings):

  1. Cook the grain of your choice (6 cups cooked) – set aside in large bowl
  2. Chop and mix together 1 large cucumber (seeds removed), 3.5 cups red onion and 1 large jar of roasted red peppers in the grain bowl
  3. Whisk together dressing – juice of 3 lemons, 2 tbsp oregano, 1/2 cup chopped basil, 1/3 cup olive oil and 2 tbsp dijon mustard
  4. Combine veggies, dressing and 6 cups cooked and cooled grain of your choice (barley, farro or wheat berries)
  5. Crumble in 2 blocks of feta
  6. Serve cold

Ingredients:

  • 1 large cucumber, chopped + seeds removed
  • 3.5 cups sliced red onion
  • 1 large jar (approx. 5 peppers) roasted red peppers
  • 3 lemons
  • 2 tbsp oregano
  • 1/2 cup chopped basil
  • 1/3 cup olive oil
  • 2 tbsp dijon mustard
  • 6 cups cooked hearty grain (barley, farro or wheat berries)
  • 2 small blocks of feta (4 inch x 2 inch x 1/2 inch)
